Our whiskeys are an authentic expression of our farm:
a unique combination of soil, grain, water, and time.

Our Grain

We grow our own grain - we control and manage the varieties grown, the harvest, and the processing.


The Stills

We use traditional alembic pot stills (typical in Scotland), which are purpose-built to draw out maximum flavor and character from the spirit. Our methodical “low and slow” distillation process allows for precise, pure cuts.


Barrel House

Our whiskey is aged in a traditional dunnage style barrel house where the barrels are in direct contact with the earth. The barrel house is unacclimatized for a natural aging process which responds to the seasons and is designed to bring out subtle flavors


Our farm sits on an aquifer of Limestone bedrock - the mineral quality of the water is ideal for whiskey.
